These muffins are easy to make, healthy, delicious and you can prepare in advance. It’s so easy to swap and change ingredients to what you like.
Ingredients (serves 4)
- 6 eggs beaten
- 4 slices bacon, diced
- 1 cup mushrooms, diced
- I cup capsicum, diced
- Chop bacon, capsicum and mushrooms.
- Mix in beaten eggs.
- Grease muffin tins, pour into trays and bake 20 mins or until golden brown.
