These muffins are easy to make, healthy, delicious and you can prepare in advance. It’s so easy to swap and change ingredients to what you like.


Ingredients (serves 4)

  • 6 eggs beaten
  • 4 slices bacon, diced
  • 1 cup mushrooms, diced
  • I cup capsicum, diced

Method

  1. Chop bacon, capsicum and mushrooms.
  2. Mix in beaten eggs.
  3. Grease muffin tins, pour into trays and bake 20 mins or until golden brown.

  • Great recipe, simple and as you say you can swap the ingredients. Chopped spinach works really well if you don’t like your bacon and has such amazing health benefits.
