A twist on plain old eggs, it’s a quick and easy recipe, which will be enjoyed by young and old as a breakfast or lunch.


Ingredients (serves 4)

  • 1 Tbsp Oil
  • 1 Large onion sliced very thinly
  • 4 Eggs

Method

  1. Heat pan and sauté onions in oil until tender and brown.
  2. Crack eggs into the pan leave to cook for 5 minutes.
  3. Flip gently without breaking the yolk. Cook eggs to your liking and season with salt and cracked pepper.

Notes

Serve with toast soldiers for dipping.
