An old fashioned but tasty slice for those who love coconut.


Ingredients (makes 12 Slices)

  • 1 cup Self raising flour
  • 1 cup Caster sugar
  • 1 cup Mixed dry fruit
  • 1 cup Shredded coconut
  • 125 grams Butter melted
  • 1 Egg beaten
  • 1/4 cup Icing sugar to serve

Method

  1. Preheat oven to 180°C. Lightly grease an 18cm x 27cm slice pan. Line base and sides with baking paper.
  2. Step 2 Combine sifted flour, sugar, dried fruit and coconut in a large bowl. Add butter and egg and mix until well combined. Press mixture into prepared pan. Cook for 30 minutes or until lightly browned and cooked when tested with a skewer. Cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
  3. Step 3 Cut slice into squares or triangles and dust with icing sugar to serve.

Notes

Lovely served with a cup of tea.

  • Love how you didn’t specify which dried fruit so I can use my imagination or just what’s in my cupboard. Teaching my 12 yr old to cook and he likes to follow recipes exactly so this will be good for him.
