With Australia Day coming up, many of us will be having BBQ's and enjoying the outdoors. This dessert is perfect after a BBQ lunch or dinner, as it isn't too heavy and is really quick to put together – it's also sure to impress!


Ingredients (makes 8 Nectarine 1/2's)

  • 4 ripe Nectarines
  • 8 small scoops of good quality vanilla ice cream
  • Raspberries - to serve
  • pomegranate seeds - to serve
  • Mint - to serve
  • Maple syrup

Method

  1. Pre heat the BBQ grill and lightly spray a grill with oil. When hot, grill the nectarine halves for approximately 3-4 minutes each side until softened and warmed through
  2. Place onto a plate and top with a small scoop of vanilla ice cream and drizzle with maple syrup. Decorate the plate with raspberries, pomegranate seeds and mint

Notes

Choose nectarines that are ripe but not overly soft as you don't want them to fall apart when grilling. You can use honey instead of maple syrup if you wish

  • Grilled nectarines are nice, but I think I prefer them grilled pear with cinnamon. We serve it with Greek yoghurt and some roasted pine nuts/ roasted almond shaving.

  • Nectarines are still plentiful in some areas -they are in SA anyway – they don’t keep like a lot of other fruit does so it’s an excellent way to use them…..I reckon you could try white peaches but a lot of them are “cling stone” so getting suitable size pieces may be difficult.
