A delicious and fast dinner


Ingredients (serves 4)

  • 500g Lean Beef Mince
  • 1/2 Onion
  • 1 Clove Garlic, minced
  • 1 Chilli, seeded and finely chopped
  • 1 Can (~450g) Refried Beans
  • 1 Jar (~450g) High-quality Salsa
  • 8 Medium-Large Wraps
  • 1 Cup Grated Cheese
  • 2 Tomatoes, Chopped
  • 2 Cups Shredded Lettuce

Method

  1. In a large pan over medium heat, combine the beef and onion. Cook until no pink remains. Add the garlic and cook, stirring frequently, for 1 minute.
  2. Stir in the chilli, refried beans and salsa. Cook until mixture is bubbling, stirring frequently.
  3. Serve on wraps with chosen toppings

Notes

*I make my own salsa to use so it lowers the sodium in this recipe. *This also works with taco shells *You can stir the cheese into the meat mixture but my toddler needs to see that there is cheese which is why I no longer do that.

  • These look great. We love doing different types of wraps for dinner!

  • Some only like cheese if it’s “cooked”. It is a great camoflauge to get kids to eat different vegetables. Some people cook the tomato with the mince.

  • Even healthier when you use multi seeded, sweet potato buckwheat or wholemeal wraps.
    Yes, we do this type of fillings on taco’s.
