Healthy Granola


Ingredients (serves 20)

  • 4 cups Organic Rolled Oats
  • 2 cups Mixed nuts and seeds
  • 1/2 cup Coconut flakes
  • 2 tbsp Chia seeds
  • 1/2 cup Dried fruit (cranberries/gojis)
  • 3/4 cup Coconut Oil
  • 3 tbsp Rice Malt Syrup

Method

  1. Combine oats, coconut, seeds in a bowl. Melt coconut oil and rice malt in a pan and stir through coating all mixture. Spread on a line tray or two and press down hard. Bake at 150 degrees celcius for 20 minutes until golden. Allow to cool then add dried fruit and chia seeds. Store in a container and top on smoothies or eat with yoghurt.

  • I wouldn’t give it to children too young who don’t chew properly. They could get the nuts stuck in their throat….or on the way down into their stomach. If the nuts have points in them they could get them literally stuck in their teeth.

  • Would swap the rice malt syrup for honey, golden syrup or maple syrup – I know its not quite as healthy but I always have those items in the cupboard… Otherwise this sounds like a great recipe!!

  • Rice malt syrup is sugar so with out this it would be healthy.

      We keep the rice malt at a very low amount for the amount of servings it makes. It is still a form of sugar but very low fructose and helps the granola stick together. Can be omitted :)
