Ingredients (serves 8)

  • 6 cups Grated fresh vegetables (any of the following: carrots, brocolli, cauliflower, sweet potato, parsnip, zucchini, capsicum)
  • 1/2 cup Chia seeds
  • 1/3 cup Linseed/flaxseeds
  • 4 eggs Lightly, beaten
  • 1 packet Maggi "herb potatoes" recipe base
  • 1 1/2 cups Grated cheese (cheddar is nice)

Method

  1. Preheat oven to 160 degrees. Mix all of the ingredients together in a large bowl - except the grated cheese.
  2. Line a 9 X 12 inch casserole/ baking dish with greaseproof paper. Place vegetable mixture in dish and top with grated cheese.
  3. Bake at 160 degrees for 40 mins.
  4. Cool slightly before cutting - I served this with a balsamic glaze and fresh tomatoes.

Notes... A light healthy meal incorporating a few superfoods.

  • Delicious and simple, a winning combination. I must make this for my family, but I might need to give it a different name. LOL.

  • So after reading this the other day, I made it for dinner. I used cauliflower, zucchini, carrot and a potato. I didn’t have the seeds to go in it, so I used some pine nuts instead. I also used duck eggs (we had a few from our ducks ) It was soooooo yummy. The whole family really enjoyed it. Thanks for sharing a great recipe. Today I bought the chia and linseeds to try for next time.

  • What is the herb potatoes recipe base similar to? I don’t use packet mixes because I dislike preservatives.
