Yummy lemon and blueberry cake.
Ingredients (serves 8 | makes 8 )
- 125g margarine
- 1/2 cup sugar
- 1 egg
- 2 cups SR flour
- 1 cup yoghourt
- 1 jar lemon curd
- 1 punnet blueberries
- Mix margarine and sugar till sugar incorporated, add egg, and flour and yoghourt alternately.
- Pour mixture in loaf tin, cook 160 degrees C for 1 hour.
- When cake cooked poke holes in it with a chop stick and fill the holes with lemon curd, top each hole with a blueberry, Spread more lemon curd over cake and top with remaining blueberries.
