Flat breads are a great alternative to sandwiches and can also be used to make burritos or enchiladas – they are also super easy to make and at a fraction of the price of commercial flat breads or wraps.

Ingredients (serves 8)

  • 1 1/2 cups plain flour
  • 1 cup plain wholemeal flour
  • 2 tsp baking powder
  • 1/4 cup olive oil
  • 1 cup water
  • Try adding herbs and spices for different flavours

Method

  1. In a large mixing bowl combine all ingredients and mix well. As the dough starts to come together use clean hands to bring the dough together into a ball. Place the ball of dough on a floured surface and knead for about 5 minutes until the dough becomes very smooth and elastic. Divide the dough into 8 balls, cover with a tea towel and let rest for an hour.
  2. Once rested, heat a large frying pan over a medium heat and spray lightly with oil. Using a floured rolling pin roll each ball of dough on a floured surface until very thin. Place the rolled out dough into the frying pan one at a time and cook on each side for 20 – 30 seconds or until lightly golden. As you remove each bread from the pan place it between two clean tea towels to help keep the bread soft until ready to add filling. For best results add filling and serve immediately.
