This cabbage salad can be thrown together for an easy and tasty dinner.
Ingredients (serves 2)
- 250g Bacon
- 1 small Onion
- half a large cabbage shredded coarsely
- 2 tablespoons butter
- 1 teaspoon curry powder
- Handful cashews
- pinch of salt
- pinch of pepper
- sprinkle of garlic salt
- In a large fry-pan lightly fry bacon and onion in butter until the onion is soft and bacon lightly cooked.
- Add salt, pepper, garlic salt and curry powder then cabbage and stir fry for 5-8 mins on low.
- Add cashews and serve.
Notes... Something different - add raisins for a burst of good flavour if you like.
