Get the kids involved with the constructing of these little cakes.


Ingredients (makes 6 Cakes)

  • 1 packet Chocolate ripple biscuits
  • 300-500 grams Cream
  • Fruits that you love for decoration

Method

  1. Whip cream until thick.
  2. Take a biscuit and spread on a layer of whipped cream and form a sandwich with another biscuit. Continue to sandwich biscuits together with cream. I like to make mine 4 biscuits high.
  3. Coat the sides and tops with cream.
  4. Decorate as desired. I like to use berries but you could use lollies, shaved chocolate or a sprinkling of cocoa.
  5. Place in the fridge for an hour or two before serving.

  • This is up there with my favourite dessert. So easy to make and I’ve now made variations eg. mint version, use ginger biscuits or butter nut snap biscuits. I’d never considered making individual serves, but it makes sense.

  • They look so cute! Another use for chocolate ripple biscuits is as individual cheesecake bases. Place a biscuit in muffin tray hole, top with cheesecake filling, let sit in fridge fir a couple of hours. Biscuits end up softening and are yummy!
