The waffles have a light and airy texture inside whilst the wattleseeds adds a contrasting crunch texture. We LOVE THEM and hope you do too.


Ingredients (serves 12)

  • I egg
  • 1 dessertsp bush honey (I used bush honey as it goes beautifully with the wattleseeds but yes ordinary or floral varieties are fine.)
  • 60g Vanilla creamy yoghourt
  • 60g milk (I used lactose free zymil) but ordinary or low fat is fine.
  • 60g icing sugar, sifted
  • 120g self-raising flour, sifted
  • 1/2 teasp baking powder, sifted
  • 11/2 teasps wattleseeds
  • FOR THE BUSH HONEY DRIZZLE:
  • 1/2 cup bush honey
  • 1 oz butter
  • Extra sifted icing sugar for presentation.

Method

  1. Turn waffle maker on.
  2. In a bowl whisk egg and bush honey. Stir through Vanilla Yoghourt and milk and give a good whisk. Add sifted icing sugar, self-raising flour and baking powder and stir well.
  3. Add wattleseeds and stir to combine.
  4. Spray waffle maker with sunflower oil spray and add tablespoons of mixture into waffle indents to fill.
  5. Close the waffle maker and wait for a few seconds for the magic to happen. You can open the waffle maker to check on waffle goldness during cooking.
  6. The beauty of a waffle maker is that it cooks both sides at once. Crisp delicious waffles on the outside and fluffy totally cooked and light waffles on the inside.
  7. FOR THE BUSH HONEY DRIZZLE:
  8. Simply place the honey and butter into a microwave safe dish and zap for a few seconds .
  9. Place waffles onto serving dish and dust with sifted icing sugar. Serve with bush honey drizzle and sit back and enjoy nature at it's best. EnJoY!

Notes

We have a Aboriginal community centre 5 minutes from us and a beautiful shop 20 minutes drive, so accessing wattleseed is easy but if you are not lucky like us you can purchase wattleseed online ...a great source is www.bushfoodshop.com.au/wattleseed-ground/

  • Scrumptious looking waffles and I love the heart shape of these waffles. I also love bush food ingredients and have eaten pasta with wattle seeds and it was delicious.
