Lovely little biscuits that are simple to make and also a good way to use up extra home made jams.

Ingredients (makes 48 biscuits)

  • 250 grams butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla essense
  • 1 egg
  • 3 cups plain flour
  • 1/2 cup jam (any flavour)

Method

  1. Preheat oven to 180 degrees
  2. Cream butter and sugar together.
  3. Add egg and vanilla essence. Beat well.
  4. Sift and add flour to make a stiff dough. Refrigerate dough for 30 minutes.
  5. Roll teaspoons of dough into balls placing them on a tray lined with baking paper.
  6. Make a well in the middle of the ball using the back of a wooden spoon (this will also flatten them down). Put around 1/2 teaspoon of jam into the well.
  7. Bake for 10-12 minutes. Allow to cool before eating as jam will be quite hot.

Notes... Also nice with lemon curd and any type of jam. Can add spices to the biscuit mix to give a different flavour combination to match with the jam filling (ginger, cinnamon etc).

  • This just reminded me there is strawberry jam in my fridge( not been used for quite long time now) and I am awful at making biscuits. But her kids won’t say no to jam biscuits. I am sure so will definitely be making it. Thanks for recipe

  • I will be making these for my daughter =D

    • I made this biscuits tonight. Super easy to make! There are 2 problems I have found with this recipe though 1. They are a bit dry, not sure if that has to do with something I had done like leaving them in the fridge for way longer than the 30 minutes……2. They are so moreish!

Despite the dry factor I love the flavour of the biscuit base. So yummy. The biccies turned out to be quite small which I’m totally fine with because my daughter tends to grab 2 of everything so 2 of these is fine with me.

My husband said they are not the same he grew up with but these are a must to try. I will definitely be making these again!!!!
