Lasagna Muffin Treats


Ingredients (makes 16 )

  • 1 packet Latina Fresh Lasagna Sheets
  • 1 teaspoon Salt
  • 500 gms Chicken Mince
  • 4 Button Mushrooms
  • 1 Carrot
  • 1 Bottle Cooking Tomato Sauce
  • 2 Eggs
  • 1 cup Mozarella Cheese
  • 1/2 cup Parmesan Cheese
  • 1 Red Onion
  • 3 tablespoons Olive Oil
  • 1 teaspoon Cracked Black Pepper
  • 2 Cupcake trays
  • 1 bottle Olive Oil Spray

Method

  1. Dice Onion, Cut Mushrooms and grate Carrot. Place onions in a pot with Olive Oil and fry lightly. Add Chicken Mince until lightly cooked then add salt and Tomato Sauce. Then place mushrooms and carrots and cook until sauce is thick. I like to boil the Latina Lasagna sheet for 2 minutes just so its not dry and then cut each sheet in 3 pieces
  2. Spray Cupcake Tray with Olive Oil spray then place Each Lasagna sheet cut in 3 pieces on each cupcake hole then add chicken mince sauce mix followed by a handful of parmesan and mozarella cheese. Then add a teaspoon of the beaten eggs and some cracked pepper then do the same for the next layer.
  3. Once all have been filled bake in oven on 180 degree heat for 10-15 minutes but each oven will differ with time. Enjoy your lasagna treats!!!

  • Not sure I’d like crunchy lasagna sheets …. might try it with pastry instead.

  • Could you swap the chicken for beef? Would you need to adjust any of the other flavours?


    • I prefer chicken but you can have beef of course
