Not a weight watchers recipe but its all about balance ,,, Right ?


Ingredients (serves 6)

  • 5-6 med Potatoes
  • 1 1/2 cups chopped ham
  • 1 cup grated tasty cheese
  • 150 ml cream
  • 5-6 small-med tomatoes sliced
  • salt and pepper
  • chopped dill ( optional)

Method

  1. Peel and slice potatoes into approx. 1/2 cm slices Boil for 5 minutes or until just tender Drain and let cool slightly
  2. Grease an oven dish Lay some potato slices on the bottom of dish , top with some cheese, ham cream and tomatoes. Sprinkle toms with a little salt and pepper
  3. Repeat layering in this way finishing with a potato layer
  4. Sprinkle cheese over the top and bake in moderate (180) oven until slightly golden ( approx 30-35 minutes)

Notes

I sprinkled a little dill in each layer but this is not essential. It just adds a little extra flavor. Yes i know its not exactly a diet dish .. but life is about balance and if you only make this occasionally you'll be ok

  • My kids love potato bake, but not all of them are keen on tomato. I prefer to make it with onion and garlic so everyone eats it. Instead of ham / bacon, I use vegetarian bacon style rashers, so the vegetarians under us can enjoy the dish as well.

  • Great use for the left over ham from Christmas, otherwise use bacon for an even better flavour. Thanks for sharing.
