Meatballs are a great lunch box solution for hungry kids! For a nutritional well balanced lunchbox idea, why not team them with a mandarin, celery sticks with peanut butter and the delicious new Abe’s Bagel Bites with half the fat content of potato chips, no artificial colours, flavours or preservatives and only 0.6% of sugar in each packet. Found at your local Woolworths.


Ingredients (serves 4)

  • 500g minced beef
  • 25g sliced salami, finely chopped
  • 2 cloves garlic, crushed
  • 50g parmesan, finely grated
  • 35g dried breadcrumbs

Method

  1. For meatballs, place all ingredients in a bowl and season to taste with salt and pepper. Mix well to combine. Form tablespoonfuls of mixture into balls.
  2. Heat oil in a large frying pan or saucepan over high heat. Add meatballs and cook, turning occasionally for 5 minutes or until well browned. Remove from pan and allow to cool.

  • Never thought of putting salami in meatballs before. Add an extra hint of flavour I guess?
