These strawberries and cream lego jellies are a healthy alternative to bought lollies – free from added sugar, preservatives and colourings.


Ingredients (makes 20 jellies)

  • 3.5 tablespoons gelatine
  • 1.5 cups of pureed strawberries
  • 2 tablespoons honey
  • 1/2 cup coconut cream
  • 1 jelly mould

Method

  1. Stir gelatine into 1/3 cup cold water until it is all dissolved. Let it sit for 4-5 minutes for it to become rubber like.
  2. Heat the strawberry puree and honey in a small saucepan until almost boiling. Take it off the heat and add the gelatine and stir until the gelatine ball has dissolved. Use a stick blender to puree thoroughly. Watch out - the liquid is hot!
  3. Mix in the coconut cream and pour into jelly moulds and set in the fridge for around 1 hour (or until firm).

Notes

You can substitute any fruit for this although pineapple and kiwi fruit may not set as well due to their acids. Store in an airtight container for up to a week...if they last that long.
