- 1/8 cup sugar
- 50g butter
- 2 passion fruit, pulp
- 1 lemon, zested and juiced
- 2 egg yolk
In a small saucepan over a low heat melt butter, add sugar and stir over heat until dissolved. Whisk in egg yolk, lemon juice, zest and passion fruit. Continue mixing over low heat until well combined and begins to thickens. Remove from heat and allow to cool.
Use in place of jams, as a filling in tarts or as an icing.
