These lemon rice bars are an easy to make snack.

Ingredients (makes 15 Bars)

  • 1 Zest of one lemon
  • 1 Juice of one lemon
  • 300g Marshmallows
  • 6 cups Rice Bubbles
  • 4 1/2 Tbsp Butter


  1. Melt butter in a saucepan with lemon zest and juice.
  2. Add the marshmallows and mix until all the marshmallows have melted. Then take off heat.
  3. Combine marshmallow mix with the rice bubbles. Then spread out over a lined baking tray. Size depends on how deep you want your bars to be. Leave for half an hour to an hour. Cut up to a snack size that suits and enjoy!
