Healthy, fresh and delicious, I love this quick dish as it always satisfies


Ingredients (serves 4)

  • 4 Chicken breast fillets
  • 1/4 Cup Chopped fresh rosemary
  • 2 cloves Garlic chopped finely
  • 2 Large lemons 1 for the zest (whole lemon) & juice (1 1/2 TBS), one for wedges to serve
  • Good olive oil
  • Salt & pepper

Method

  1. Mix the chopped rosemary, garlic, lemon zest, lemon juice, salt, pepper and enough olive oil together in a small bowl to make a paste.
  2. Marinade for at least an hour, or up to two hours if desired
  3. Grill chicken until cooked through, either on frypan or for more intense flavour, on a BBQ grill or webber grill
  4. Serve with fresh lemon wedges to squeeze over the top

Notes

This is also nice in a wrap or cold the next day

  • I usually associate rosemary with lamb. This will taste good. Thanks.
