This Lime Chicken and Vegetable Rice Recipe is a quick, easy and tasty recipe for those who love chicken and rice. Perfect for lunch or dinner (and leftovers are great for work too)!
Ingredients (serves 2)
- 1/2 cup Brown rice, uncooked
- 1/2 Red capsicum
- 1 Medium carrot
- 1 Cup Snow Peas
- Cooking oil spray
- Salt
- 380gms Chicken Breasts
- 1 Tbsp Lime juice
- 1 Small red chilli
Method
- Cook rice
- Slice capsicum, carrot and snow peas. Add capsicum and carrot to frying pan with 2Tbsp of water. Cook over medium heat for 2 minutes
- Add snow peas and cook for a further 30 seconds. Stir vegetables into cooked rice
- Spray frying pan lightly with oil and heat. Slice chicken and add to pan
- Add lime juice, sliced chilli and a pinch of salt. Cook over high heat, stirring, until chicken is golden
- Serve chicken over veggie rice
