A very simple dish to whip up.
Ingredients (serves 1)
- Red Capsicum
- Sweet Potato
- Feta Cheese
- 1-2 slices Bread of your Choice
- Spinach or Rocket
- Balsamic Vinegar
- Olive Oil
- Preheat oven to 180 degrees. Thinly slice vegetables. Peel if required. Coat in olive oil and bake until cooked. You can also grill veggies if you prefer.
- Remove skin from capsicum. Toast bread. Layer vegetables on top of toasted bread.
- Top with spinach or rocket and crumbled feta. Drizzle with olive oil and balsamic. Enjoy!
