My toddler loves this dish!


Ingredients (makes 4 portions)

  • 200g Macaroni pasta
  • 800ml Milk
  • 3 tbsp Corn flour
  • 150g Tasty cheese
  • 150g Mascarpone

Method

  1. Cook the macaroni according to the packet directions or to your liking. Rinse and set aside.
  2. Make a white sauce with the milk and cornflour. Using 600ml of the milk heat until just before boiling, whisk in the cornflour and remaining milk to the hot milk.
  3. Cook the sauce until bubbling and has thickened up, whisk constantly to avoid lumps
  4. Stir in the cheese until melted, then mascarpone... then pasta! Mix all together.
  5. Spoon in to serving dishes.

Notes

If you serve in ramekins or similar, you can brown the tops under the grill if you like.

  • I always thought macaroni cheese required a cheese sauce. But I’ve now seen a couple of recipes with simply the cheese, milk or cream and cooked pasta stirred thru
