A quick & easy way to prepare a tasty couscous dish.


Ingredients (serves 2)

  • 2 cups Couscous
  • 3 Spring onions
  • 1 cup Sliced olives
  • 1 cup Spinach leaves
  • 5 slices Ham
  • 2 cups Grated cheese
  • 1 Tbsp Fresh basil
  • 1 Tbsp Butter

Method

  1. Prepare couscous by adding boiled water and butter then mix with fork until light and fluffy.
  2. Pan fry ham, spring onions, spinach leaves and basil over medium heart until ham is cooked.
  3. Add to couscous and stir. Add salt and pepper if required.

Notes

You may like to add, sun/semi dried tomatoes, zucchini, various herbs of choice and the cheese can be replaced with fetta if so desired.

  • Rice sounds like a good alternative I might like that rather than cous cous tha ks thoguh
