Quick easy lunchbox idea that will have the kids fuelled with energy and bursting with vegetable goodness.


Ingredients (serves 6)

  • 8 Eggs
  • 1/2 cup Milk
  • 1/4 cup Natural Yoghurt
  • 1/4 cup Diced Pumpkin
  • 1/2 cup Spinach
  • 1/4 cup Fetta cheese
  • 1/4 cup Bacon (cooked and diced)
  • 1 Brown Onion (diced)
  • 1 Tbsp Olive Oil
  • 1/2 cup Grated Chedar Cheese
  • 4 sheets puff pastry

Method

  1. Heat oil in large frypan on medium heat. And preheat oven to moderate. Add bacon and onion, stir for 3 minutes. Add diced pumpkin, cook for a further 8 minutes. Add spinach and cook for a further 3 minutes and then allow combined ingredients to cool.
  2. In a bowl combine eggs, yoghurt and milk. Then once fried mixture is cooled, add to your egg mixture.
  3. Line baking paper in muffin or cupcake trays. Then place puff pastry on top of baking paper in each. Fill each with egg mixture and top with grated cheese. Place in the oven on moderate heat for approximately 35 minutes and allow to cool.

Notes

This is a great school lunchbox idea. My mum used to make these for us to take for school or for afternoon tea when we got home. They are full of goodness.
