A quick meal with salad for dinner. Can be eaten hot or cold so also good for lunch boxes.


Ingredients (makes 12 Quiches)

  • 3 Sheets Borgs Shortcut Pastry
  • 6 Eggs
  • 3/4 Cup Milk
  • 2 Spring Onions Finely chopped
  • 200 grams Diced Ham
  • 1/2 cup shredded Cheese
  • 3-4 Mushrooms finely diced
  • 1 Teaspoon Chopped Parsley

Method

  1. Pre-Heat oven to 200 celsius Grease a 12 cup Muffin Tray
  2. Put eggs, milk, parsley and cheese together in a bowl and mix. mix Mushrooms, Ham and spring onions together in another bowl.
  3. Cut circles out of pastry to fit muffin tray cups put into cups. place mushroom mix in base of pastry shell then start to add milk and egg mixture to the pastry cups.
  4. Place in center of oven and cook approx 12 minutes or until set. Enjoy

  • I often make something like this without ham, more mushrooms and add garlic and some pesto. With puff pastry goes just as well, I use gf puff pastry

  • I’ve just added this to the menu for my grandsons first birthday party. Just wondering if I could use puff pastry instead of short ?


    • I think it would work just as good I have used puff pastry in ordinary quiches before so give it a try and let us know how it works out.

  • Yummy looking quiches – i make similar ones and we have fun making them. We place different toppings in bowls and sprinkle them on top of each little quiche.

  • They would be ideal to take to a byo party. I’m wondering if they could be cooked in batches and some frozen to thaw and heat if you have visitors arrive unexpected.


    • I have not frozen them so am not sure how they will turn out. I just keep them in an airtight container.
