This cake is a moist desert cake that tastes even better the next day!


Ingredients (makes 1 23 cm cake)

  • 220grams plain flour
  • 1 1/2 Teaspoon Bi carb soda
  • 2 eggs,beaten
  • 1 1/2 cups sugar
  • 425 grams Mango flesh , diced

Method

  1. Sift the flour and bi carb together
  2. In another bowl combine the eggs , sugar then mix in mango
  3. add the flour to the mango mixture and mix well
  4. Pour batter into a paper lined 23 cm cake tin
  5. Bake in a moderate oven 35-40 minutes or until a skewer comes out clean

Notes

No need for icing, just a sprinkle of icing sugar on top and serve with cream and a few slices of mango

  • Mango ???? is one of my favourite fruits. Must give this recipe a try.

  • Mango is my all time favourite summer fruit so I am looking forward to making a moist mango cake! I am thinking of serving it as a dessert with icecream. Thank u so much for posting the recipe.

  • We love mango cake ! I make mine with fresh mango’s, eggs, raw vanilla powder, a pinch of salt and almond meal.
