Boiling this cake batter helps to keep the fruit plump and juicy and the cake moist


Ingredients (makes 1 cake)

  • ! cup sugar
  • 230 grams currants
  • 120 grams butter
  • 1 teaspoon mixed spice
  • 1 cup cold water
  • 120 grams sultanas
  • 1/4 cup brandy
  • 1 cup self raising flour
  • 1 teaspoon bi carb soda
  • 2 eggs , beaten
  • 1 cup plain flour

Method

  1. Place first 7 ingredients ( everything except the flours,bicarb and eggs) in a sauce pan
  2. Bring to the boil. Boil gently for 1-2 minutes. Remove from heat
  3. Have ready beaten eggs and mix through fruit mixture
  4. Fold in sifted flours and bicarb
  5. Pour batter in to well greased paper lined tin . Top with blanched almonds if desired
  6. Bake in Moderate oven ( 180) 45 minutes ( check at 30 minutes to see if done)

Notes

Mum makes this cake every christmas.. but to be honest .. we are all so full ,it doesn't get eaten till the next day ! Moist and spicy , it is good any time of year really ! It keeps well in an airtight container
