This One Pot Creamy Chorizo and Tomato Penne is an easy one pot indulgent weeknight dinner perfect for the Winter weather. You could also pan fry chorizo in a bit of oil beforehand if you prefer a crispier texture.

Ingredients (serves 4)

  • 500g Penne
  • 2 sliced chorizo sausages
  • 410g Can chopped tomatoes
  • 400g Can cherry tomatoes
  • 3 garlic cloves
  • 1 brown onion
  • 3.5 cups Chicken stock
  • 1 tbsp Dried basil
  • 120g Baby spinach
  • 1/4 cup Cream
  • 1 Pinch Salt and pepper
  • 1 Pinch Parmesan or tasty Cheese to serve


  1. Place all ingredients except spinach, cream and basil in pot and bring ingredients to simmer stirring regularly.
  2. Cook for approximately 20 minutes or until pasta is cooked to your liking.
  3. Stir in spinach and basil for a few minutes. Season with salt and pepper. Stir through cream until warmed through and serve. Top with cheese if desired.
