Super quick no hassle yummy muffins for afternoon tea!!! Milk and flour can be substituted out to cater for any allergies, for example you can use a gluten free plain flour and any lactose free milk to suit


Ingredients (makes 12 Small muffins)

  • 1 and a half cups Plain flour
  • 1/2 cup White sugar
  • 1 and a half tea spoons Baking powder
  • 2 Juicey oranges
  • 2 teaspoons Orange rind
  • 2 Eggs
  • 1/4 cup Milk
  • 1/2 cup Greek yoghourt
  • 1 teaspoon Vanilla essence
  • 1/4 teaspoon Almond essence
  • 1/4 cup Poppy seeds
  • 2 tablespoons Butter
  • 1/2 cup Soft icing sugar
  • 2 tablespoons Orange juice saved from the oranges

Method

  1. Mix dry ingredients together, leaving the icing sugar for later. Sift the flour to get fluffier muffins
  2. Combine the wet ingredients and then add to the dry ingredients, using a beater to completely combine the mixture
  3. Using the oranges juiced, grate 2 tablespoons of the rind, and set them aside for the icing Set the mixture aside
  4. Preheat a fan forced oven to 180 degrees
  5. Spoon 2 tablespoons of mixture into patty pans, and bake at 180 degrees for 15-20 minutes or until a skewer comes out dry and they are golden brown in colour
  6. Once baked, cool on a wire rack until completely cool
  7. Mix the icing sugar and 2 tablespoons of orange juice from the oranges, and drizzle over the muffins.
  8. Make a cuppa and enjoy!!!

  • oh these are so sweet, I love orange and poppy seed cake, but never thought to make it in miniature version – now my girls can have it in their lunchboxes!

    • Ooo I haven’t tried lemon and poppyseed but I love lemon icing on baked treats, so I’ll have to try lemon and poppyseed combo next!!! Thank you!!!!



      • Oops! I should have written orange and not lemon! I was using lemon in my cooking and my brain registered lemon! I love orange and poppyseed muffins! Like you – I do love lemon icing too – it is a favourite on slices. I might try lemon too – let’s see how it goes? :)
