This paleo chia coconut, mango & berry parfait is sure to be great hit for dessert at the Christmas table!


Ingredients (serves 4)

  • 1/4 Cup chia seed
  • 1 cup coconut milk
  • 3/4 cup mixed berries (fresh or frozen)
  • 1 whole mango - peeled & diced
  • 1 Tbsp honey
  • 2 Tbsp shredded coconut

Method

  1. Soak chia seeds in coconut milk, honey & mixed berries overnight.
  2. Next day layer the soaked chia-berry mixture with diced mango into a parfait glass - sprinkle grated coconut on top. Chill in the fridge till ready to serve.
