Very easy and fast to make, these little appetisers will be a hit at your Christmas get together


Ingredients (makes 16 Squares)

  • 2 Sheets Puff pastry, thawed
  • 8 Cherry tomatoes, cut in half
  • 1/2 cup Smooth Ricotta
  • 1/4 cup Pesto (either fresh or jar is ok)
  • Salt & pepper
  • 1 Egg, beaten
  • Italian herbs (dried)

Method

  1. Cut both sheets of pastry into 16 even small squares so you have a total of 32 squares. Then for 16 of those squares, cut a small square out of the middle of each piece
  2. Lay the whole squares on a baking tray that has been lined with baking paper, and place a square with the middle cut out of it on top of each of the whole squares to create a “wall’ around each one
  3. Mix the ricotta, pesto and salt and pepper together
  4. Brush each square with egg, then add a small dollop of ricotta mix in the middle of the pastry.
  5. Place a half of cherry tomato on top and sprinkle with Italian herbs
  6. Cook in a moderate oven (180 degrees) for 20 minutes or until golden and puffed up
  7. Serve warm or cold

Notes

You can switch these up by adding olives, yellow cherry tomatoes, basil etc. Have fun and play around!
