Mmmmm… deliciously tropical! This pineapple delicious recipe is super easy and gorgeously yum.
- 1/3 cup sugar
- 2 tablespoons butter or margarine
- 2 eggs, separated
- ½ cup, tin pineapple in natural juice (with juice)
- 1 cup, Lite coconut milk
- 1/2 cup self raising flour
- ¼ cup desiccated coconut
Puree pineapple and juice with a blender or mix stick.
With an electric mixer beat sugar and butter/margarine together until light and creamy. Beat in egg yolks and pureed pineapple, then fold in the flour, coconut milk and desiccated coconut. In a separate small mixing bowl beat the egg whites with an electric mixer on high until soft peaks form. Gently fold the egg whites through the pineapple mixture.
Divide the mixture between 6 small oven proof bowls. Place the filled oven proof bowls in a deep baking dish half filled with water (to create a water bath). Place the water bath in a pre-heated oven on 160 degrees for 45mins.
