Chinese style Fried Rice


Ingredients (serves 4)

  • 1 can pineapple, liquid drained
  • 2 tblsp vegetable oil
  • 1 small onion
  • 3 tblsp soy sauce
  • 1 cup diced pork
  • 3 cups cooked cold rice
  • 2 spring onions
  • 1/4 cup cashews

Method

  1. Cut the pineapple into small pieces
  2. Heat the oil in a wok cook the pork thoroughly
  3. Add onion and stir-fry for about 3-5 minutes until softened. Add the rice and cook for 3 minutes.
  4. Mix all ingredients together and let it cook for another 5-10 minutes. Add salt and pepper to taste.

  • Love the sound of this Pork and Pineapple fried Rice. Great alternative to the traditional fried rice. Must give this recipe a try.
