Quick and easy potato bake that will make you very popular.


Ingredients (serves 6)

  • 1 tub cottage cheese & chives
  • 6 large potatoes
  • 1.5 cups cheese
  • Handful of breadcrumbs

Method

  1. Slice potatoes into cubes, boil them until soft but not squishy. Drain.
  2. Layer them in a dish, and mix in the cottage cheese and chives.
  3. Sprinkle with the cheese and breadcrumbs, heat at 160 degrees on bake. Cook for 30 minutes until golden and enjoy a easy stress free dish the whole family will indulge in.

Notes... This is a recipe passed to me by my dear mother in law. It's truly spectacular and I make this whenever we have guests as it's delicious and filling.
