Ingredients (serves 6)

  • 1 Beetroot
  • 1 bag Spinach
  • 100gm pine nuts
  • 1 medium sweet potato (cut into cubes)
  • 100gm fetta

Method

  1. Bake sweet potato and pine nuts in oven until cooked and crunchy and set aside.
  2. On a large plate, arrange spinach, sweet potato, beetroot, fetta and lastly pine nuts.
  3. Serve.
