Not only are these Easy and healthy, they are so pretty too!


Ingredients (makes 8 Iceblocks)

  • 2 punets Fresh raspberries OR frozen raspberries
  • 1-2 TBS Caster sugar (adjust depending on tartness of berries)
  • 2 TBS Water
  • 2 Cups Greek Yoghurt
  • 1 pinch Salt

Method

  1. Place raspberries, sugar, water and salt in a heavy based sauce pan, and stir continually over low heat (without boiling) until sugar is completely dissolved, and raspberries are soft.
  2. Allow mix to cool, then squash through a sieve to remove all the seeds leaving you with a silky sauce
  3. Spoon some Greek yogurt into a mould followed by some raspberry sauce. Repeat until mould is filled.
  4. Using a skewer or thin long spoon handle, gently run it through each mould to create a swirl pattern/ gently combine the two ingredients
  5. Place into the freezer for at least 5 hours or overnight

Notes

The amount that this recipe makes will totally depend on the size iced black mold that you are using. I used the Donna Hay 8 capacity ice block mould You can use either fresh or frozen raspberries for this recipe they both work just as well

  • This looks and sounds so yum!! I just picked up some cheap strawberries the other day, they would be perfect for this…and instead of ice block an mould, could use the smallest snack-cup “tupperware” type containers. I used to do this sort of thing when my kids were at school, put a frozen container in the lunchbox in the morning, by recess it’s soft enough to eat :) plus the bonus of not having to use an ice-brick that can leak


    • or you can use any fruit that is in season, and that the kids like…e.g. stone fruit, mango, pineapple… banana and passionfruit would be yummy!!

  • I would be tempted to make some with frozen boysenberries or blueberries. They are great in icecream too. I find Greek Yogurt to be sour so I would add sugar according to taste, maybe not as much as the recipe suggests.

  • Omitting the sugar and passing on putting it through a sieve, I would make these. They do look awesome and I just know from the ingredients they’ll be delicious

  • These yoghurt ice blocks look so delicious I am going to make some tomorrow, it’s school holidays after all. Yum yum yum, the raspberries will be perfect with the greek yoghurt.
