Simple snack for family in the afternoon.


Ingredients (makes 10 pcs)

  • 10 pcs Rice paper wrappers
  • 250 gr Roasted Chicken, ripped
  • 2 stalk Coriander, chopped
  • 1 Carrot, thinly sliced
  • 1 Cucumber, thinly sliced
  • 2 Lettuce leaves, chopped
  • 1 tbs Fish sauce
  • 1/4 cup Water
  • 2 tbs Lemon juice
  • 2 tbs Sugar
  • 1 tbs Chili sauce
  • 1 tbs Roasted peanuts, finely chopped

Method

  1. Fill a large shallow bowl with warm water. Dip one wrapper into the water for 1 second to soften.
  2. Lay wrapper on the bench and place chicken, coriander, carrot, cucumber and lettuce. Fold in uncovered sides of wrapper, then tightly roll to enclose the filling. Repeat with remaining rolls.
  3. In a small bowl, mix the fish sauce, water, lime juice, garlic, sugar, roasted peanuts and chili sauce. Serve rice paper rolls with dipping sauce.
