My husbands favorite biscuit! Easy to make and sure to please


Ingredients (makes 15 )

  • 120g Margarine Lightly melted
  • 1/2 cup sugar
  • 1/2 cup sultanas ( and /or Coconut)
  • 1/2 cup corn flakes ( lightly crushed)
  • 3/4 Teaspoon Vanilla
  • 1 1/2 cups self raising flour
  • dash milk

Method

  1. Add sugar to lightly melted margarine Beat well
  2. add flour and Vanilla and mix well
  3. Add sultanas and /or coconut Mix ...
  4. At this stage it can be a little dry, Add small amounts of milk and mix until it holds together but is not too sticky
  5. scoop up generous teaspoons of mixture and roll in to rough balls Place on oven trays lined with baking paper
  6. Bake in moderate (180 degree) oven until golden Approx. 10- 12 minutes

Notes

These biscuits don't spread a great deal when baking, so quite a few can fit on a tray. My grand mother used to bake these all the time, I don't know why they were called Rickety Annes ...... We called them 'Mickey Mac' biscuits because that was the name of their cat who used to sit and wait for some biscuit batter every time she made them... he loved it !

  • My mother in law would love to make these cookies. She is the best cook for sweets she always makes cakes, biscuits, baklava and pasties all perfect. It’s amazing I don’t know how she does it. I love that these cookies have sultanas and vanilla
    in them, yummy.
