Ingredients (makes 12 scones)

  • 2 1/2 cups Self raising flour
  • 1 cup Lemonade
  • 1 cup Cream
  • 1 cup Chopped dates and caramel pieces

Method

  1. Pre-heat oven to 180°c, line a baking tray.
  2. Mix all ingredients together, untill well combined.
  3. Dollop large tablespoons of mixture on lined tray close together, glaze and bake for 15 - 20mins or untill golden.

Notes

I use sugar free lemonade for a slightly healthier scone. For the caramel pieces I used something similar to Jersey Chews.

  • Caramel and date scones are a favourite with lashing of butter.

  • I would use home made fresh lemonade (without sugar) and would leave the caramel pieces out. Instead of cream you could perfectly use greek yoghurt or even butter milk.

  • Maybe I could use yogurt instead of cream , still a lovely, different idea.


    • I always modify recipes depending on what is in the fridge and pantry!
