Great served with rice and a green salad. When serving adults I sometimes add some black olives to the baking dish before baking the seafood, feta and tomato mixture. The picture shows the dish before baking when olives have been added…… but they are not essential.


Ingredients (serves 6)

  • 1 tin diced tomato
  • 400g prawns, scallops or white fish fillets
  • 200g crumbled fetta
  • 2 onions

Method

  1. Chop onions, and place in oblong baking/casserole dish. Add diced tomato and fish [or prawns or scallops].
  2. Season with herbs of choice - basil, oregano etc and salt and pepper. Cover with foil.
  3. Bake at around 185 degrees celcius for 30 minutes.

  • I would not add olives

    • Sure you can add whatever you want to a basic recipe.
