Easy mid week meal. My fussy twins gobbled this up.


Ingredients (serves 6)

  • 3 Chicken thighs diced
  • 3 Rashers Bacon chopped
  • 1 Onion chopped
  • 1 Celery chopped
  • 1 Carrot chopped
  • 4 Mushrooms chopped
  • 2 Garlic cloves
  • Sprinkle Italian herbs
  • 1 can Tomato soup (400g)
  • 1 can Water
  • 200g Pasta - I used shells but whatever you have on hand works
  • Handful Cheese

Method

  1. Preheat oven to 180 degrees (fan forced). Cook pasta as per packet instructions and drain
  2. Brown chicken, bacon, garlic and onions
  3. Add veggies (you can used whatever you have in the fridge)
  4. Add can of soup. I filled the can with water and threw that in too. As well as a sprinkle of italian herbs. Allow to simmer for about 20 minutes
  5. Pour all ingredients into a casserole dish and mix. Add cheese on top
  6. Cook in the oven for about 35 minutes. We ate this on it's own but you could serve with salad and crusty bread

  • I can see why your twins gobbled this up! It looks fantastic! I think you’ve missed an opportunity to get some more hidden veggies in to this though
