This is Miss Fusspots favourite way to eat rice paper rolls.


Ingredients (serves 1)

  • Rice paper
  • Lettuce or salad leaves
  • Carrot - grated
  • Cucumber - grated
  • Cheese - grated

Method

  1. Soak a sheet of rice paper in a bowl of water for about 30 seconds. Place on a damp tea towel.
  2. Add lettuce, carrot, cucumber and cheese along an edge of the paper.
  3. Fold the food edge over the ingredients until covered. Fold on each side. Roll up.
  4. Don't forget to add a frozen drink or ice brick to keep cool.

Notes... Swap and change the fillings to suit your kids.

  • Add a couple of prawns to each roll and you’ve got an adult style lunch, especially with Vietnamese or Thai dipping sauce!

  • have never put cheese or lettuce in rice paper rolls…i usually just do carrot, cucumber, bean shoots and either prawns or chicken…so tasty

  • We did these as a picnic good the other day, awesome and easy. But hey did stick a little to each other coz they were a few piled on in the box
