This is Miss Fusspots favourite way to eat rice paper rolls.


Ingredients (serves 1)

  • Rice paper
  • Lettuce or salad leaves
  • Carrot - grated
  • Cucumber - grated
  • Cheese - grated

Method

  1. Soak a sheet of rice paper in a bowl of water for about 30 seconds. Place on a damp tea towel.
  2. Add lettuce, carrot, cucumber and cheese along an edge of the paper.
  3. Fold the food edge over the ingredients until covered. Fold on each side. Roll up.
  4. Don't forget to add a frozen drink or ice brick to keep cool.

Notes

Swap and change the fillings to suit your kids.

  • Ive never made these, have rice paper in the pantry, so im going to have my 5 yr old get involved in making these, hes a fussy eater so fingers crossed he likes them

  • Add a couple of prawns to each roll and you’ve got an adult style lunch, especially with Vietnamese or Thai dipping sauce!
