Fresh zingy flavor. and easy to prepare


Ingredients (serves 4)

  • 4-5 Spring onions,chopped
  • 2 cups chicken stock
  • 1 can coconut milk
  • 1 can coconut cream
  • 2 limes juice and zest
  • 2 Tablespoons Red thai curry paste
  • 1 1/2 Tablespoons tomato puree
  • 1 carrot, grated
  • 1 zucchini ,grated
  • bean shoots ( if desired)
  • 1/2 cup fresh coriander, chopped
  • Chilli flakes (optional)

Method

  1. Fry spring onions in a little oil until soft
  2. Add stock,coconut milk , coconut cream, lime juice, lime zest,thai curry paste and tomato puree. Simmer gently for 10 minutes
  3. Add grated carrot and zucchini , bean shoots and coriander
  4. Simmer until vegies just soft

Notes

This recipe is quick and easy but is a winner ! Fresh light flavors combine well. I have added shredded cooked chicken or prawn as well to mix it up a bit ! Serve with a sprinkle of chilli flakes if desired
