This hasselback chicken is a quick no fuss dinner using your slow cooker.

Ingredients (serves 4)

  • 4 large chicken breasts
  • 2 rashers bacon, diced
  • 1 cup cheese, diced
  • 3 large shallots
  • 1/2 cup sweet chilli sauce

Method

  1. Place baking paper on the bottom of your slow cooker.
  2. Cut slits across the top of each chicken breast and place your chicken in the slow cooker.
  3. Stuff each slit with bacon, cheese and shallots.
  4. Pour some sweet chilli sauce over the top of the chicken.
  5. Place the lid on the slow cooker and cook on low for 4 - 5 hours.


  • Sounds an easy recipe, does it have much moisture when cooked?


    • There was a pool of moisture so the chicken wasnt dry. I just drained it. This may also be because the supermarkets pump the chicken with water! You could always put it on scrunched up balls of alfoil too if you were not keen on the moisture
