a quick and easy variation of potato to enjoy with any meal

Ingredients (serves 4)

  • 10 chat potatoes
  • splash olive oil
  • sprinkle salt and cracked black pepper
  • 2 sprigs rosemary (optional)


  1. Prick potatoes and microwave for 8 minutes , or mostly cooked
  2. Place in oven dish and squash potatoes with a fork or a potato masher
  3. Drizzle with olive oil and sprinkle with salt and pepper and Rosemary if desired
  4. Bake in hot oven (190-200) for 20 minutes or until golden

Notes... I have sprinkled these with either chilli flakes or paprika to spice things up a bit !

  • These came out really good with dried chillies and some had other herbs on them.

  • Great idea to cook them a little bit in the microwave. I generally boil them for 10 minutes before roasting them, but your way is a lot easier. Thanks for the tip!!
