This is always an easy or quick lunch for me if I am in a hurry or busy. But also I make them up as an afternoon snack for the kids and myself.


Ingredients (serves 1 | makes 4 Topped corn thins)

  • 4 Corn thins
  • 8 Cherry tomatoes
  • 2 handfuls Lettuce
  • 1 tsp Vegemite
  • 4 slices Cheese

Method

  1. Spread Vegemite on all the corn thins. Then cut each tomato in half
  2. Top with cheese, lettuce and then 4 halves of tomatoes for each corn thin
  3. Season with pepper and enjoy

Notes... You can always add more salad toppings if you wish or even add some ham or chicken for some extra taste. I have used tuna once but it made the corn thins too soggy.
