If you like cream, you’ll love this recipe.


Ingredients (serves 4)

  • 500g Spaghetti
  • 1 tbs Olive oil
  • 600g Chicken breast (thinly cut pieces)
  • 200g Bacon
  • 2 Onions
  • 200g Mushrooms
  • 100g Peas (frozen)
  • 425g (can) Diced tomatoes
  • 600g Cream
  • 1 tsp Sugar
  • 2 cloves Garlic
  • Salt
  • Pepper
  • Grated Parmesan
  • Chilli Flakes

Method

  1. Cook pasta as per directions on packet.
  2. Put oil in large pan, and fry chicken.
  3. Once cooked through add chopped bacon, onion and garlic.
  4. When chicken looks browned add sliced mushrooms and fry for a minute.
  5. Add diced tomatoes, sugar, salt and pepper and fry for a minute.
  6. Once cooked, add cream and let the mixture thicken on lower heat.
  7. Steam/microwave peas and add to sauce.
  8. Drain pasta, stir through sauce and serve.
  9. Top with Parmesan and chilli flakes if desired.

Notes... I like to stir through a tablespoon of Parmesan before serving, but some may just wish to add the grated cheese to their own plate. Also, a sprinkle of chilli is divine. The spaghetti was made with the Philips Noodle and Pasta Maker, and being fresh was quick to cook.
